Where are programs that you wrote stored in text? I can find the original programs it comes with but not ones i've written.

You mean outside the game in your real computer? Files you create on CC computers are in <minecraftdirectory>/saves/<yoursave>/computer/<computerid>, and files on floppy disks are nearby there as well.
