how to close programs?

I still dont get it.
when i download any game/program i cant quit it (except breaking PC and loosing data)
is there anyforce quit combination (ctrl+s and ctrl+f doesnt work)

Ctrl-S should work - you have to hold it down.

However Ctrl-T held down terminates a program.
