Disable editing a pocket computer's files by putting it in a disk drive

No method comes to mind, short of ensuring you never give your pocket computer to anyone who might do that.

If you must hand it over, then full disk encryption would prevent them from reading the file contents (though that's not simple to implement!).

There's nothing you can do to stop them from performing a full wipe so they can copy their own stuff on, though.
